If the hot water is too hot the tea leaves are boiled and become bitter, thus losing the inherent delicacy of green tea.
To fully enjoy green tea, carefully measure the quantity of tea leaves you use, the temperature of the water and the amount of time you brew your tea. The following instructions provide general guidelines for making green tea.

  1. Pour hot water into a cup from a hot water thermos or tea kettle.

  2. Restrict the temperature of the water somewhat for higher-grade tea leaves. Use 80 ml of hot water for regular tea and 50 ml for higher-grade tea.

Allow the hot water to cool off and pour it into the cup.

Allow the hot water to cool to about 90ºC for medium quality tea leaves or to 70ºC for first grade tea leaves.
It is said that pouring boiling water from a tea kettle to the teapot may reduce the temperature of the hot water by about 10ºC.

For regular natural leaf teas, pour hot water from the pot into each teacup and after a while pour the hot water of each teacup into the pot. The length of time you let tea leaves to steep depends on the grade of the tea leaves you are using. Let regular tea leaves steep for about 30 seconds and higher-grade leaves for about 60 seconds. The trick to brewing a tasty tea is to pour the steeped tea out to the very last drop.

Use two grams of tea leaves per serving or two tablespoons of tea leaves for five guests. Restrict the temperature of the water somewhat for higher-grade tea leaves. Use 80 ml of hot water for regular tea and 50 ml for higher-grade tea.

For the second cup of tea, increase the water temperature somewhat, allow the filled pot to sit for about 10 seconds and then pour the tea into each teacup. The first brewing is the sweetest, while the second is sharper.
